No-Knead Rustic Crusty Bread

Do you have a carb tooth? My carb tooth is even more demanding than my sweet tooth, if that tells you anything.


I am powerless in the presence of a good crusty bread! Or even a bad crusty bread. Unfortunately for my midsection, I have found a recipe for a fantastic No-Knead Rustic Crusty Bread that requires a minimum amount of work. It's a no-knead bread, so all there is to do is combine the (very few) ingredients and then do a lot of waiting for the dough to rise. All you need is flour, yeast, salt, and water.

No-Knead Rustic Crusty Bread 
I like to use a combination of half bread flour and half all purpose flour. Sometimes I make loaves, sometimes I make rolls, and most times I make both. A nice slice of this rustic bread is a perfect companion for a hot bowl of soup.

The crumb is fluffy but hardy, and the crust is impossibly perfect. To achieve that beautiful crunchy-when-it's-warm and chewy-when-it's-not crust, you will need to make the oven nice and steamy by pouring some hot water into a preheated broiler pan. Believe me when I tell you that that will make you feel like a badass baker!

    Also, that video was definitely cute overload. What an interesting idea to have a cat cafe. I wonder if something like that would work for rescued animals here in the US.

  2. I don't have a carb tooth, I have a veggie tooth. But if there is a bowl of breaad in front of me and it is fresh, I may get a little weak in the knees.

  3. I have a carb tooth. I may have a whole set of carb teeth. Carbs are the best! Along with nooch, avocado and peanut butter, carbs are one of the four essential foods for life.
    I suck at making bread, I can make flat bread no issues, but bread loaves and I have a sad history of many brick-type failures. But I do have a breadmaker with a dough setting, so sometimes I will use that just to make the dough and then I will shape and bake the bread in the overn (the breadmaker bakes it in a silly shaped loaf). So maybe a no knead loaf is what I need.

    1. Carb lovers of the world unite, to eat bread! My bread maker also makes a weird shaped loaf. The loaves are twice as tall as they are wide! This bread is so easy and laid back that I don't think it could result in a brick bread. I have already informed Mr. Wing-It that he's in charge of making the next loaf, and if he can pull this off then anybody can because he has never made a loaf of bread in his life.

  4. Your bread looks perfectly crusty and chewy. I used to make no-knead bread a lot before ... before you know. I used to make it with white whole wheat flour, and it was so, so good. I'm glad you're enjoying this delicious treat, and don't worry, I don't miss it much. :)

    1. I think that if I had to go 100% gluten-free I would miss crusty bread the most. Is there such thing as gluten-free bread that is crusty like a wheat-based bread? Must investigate!

  6. I was trying to avoid bread for at least 2 weeks then I saw your post! Bread is one thing that would keep me from going gluten-free. Now that I've said that, I feel I sound like a non-vegan saying they couldn't give up cheese (or bacon) to go vegan!
    But I have a carb tooth too especially when bread looks rustic and crusty like the one you have there!

    1. Am I the little devil on your shoulder encouraging you to eat gluten-full crusty bread? :)

      Giving up wheat-based bread would be so hard! There are gluten-free breads that are OK for sandwiches and toast, but there's nothing like a good chewy, crusty, rustic, wheaty bread, is there?
