Vegan MoFo: Leek and Mushroom Pie

I got another tasty dinner for my fellow gluttons today - a vegan Leek and Mushroom Pie for Two! This beauty comes via Veganism as a meat lover and it's simple and delicious - perfect combo! Don't ask me what pie crust recipe I used. It was a Frankenstein recipe made using a mash-up of a few different ones. I'm complex like that. Instead of making one pie, I made two individual pies in my little tart pans. I chopped my leeks and mushrooms a bit smaller than Molly to accommodate my little pans, and I added a little pinch of salt and black pepper to the veggies and the sauce. Also, if you don't do soy, almond milk works like a charm. They were delicious and the recipe now lives in my "Favorite Recipes" binder! Thank you,  Molly!

Today's TV show is Downton Abbey! For some silly reason I refused to watch this show for the longest time. Then one day I was being a couch potato and trying to find something to watch, when I found a show that caught my attention on PBS. It was Downton Abbey! Now I'm hooked and can't wait for the next season. All the characters are so fabulous - and there are lots of characters! My favorite character by far is Violet, played brilliantly by Maggie Smith. What a treat she is! She's smart, funny, and very skeptical of new technology. Electricity? No thanks. Telephone? Horrid thing! She once told someone to "put that in your pipe and smoke it", which gave me a uncontrollable fit of the giggles. There's lots of drama, there are some very funny moments (most of them involving Maggie Smith's character), and the scenery, costumes, and sets are beautiful.

  5. I really like the look of the mushroom leek pie, and it's a great flavor combination but I'm really stopping to comment to say: DOWWWWNNNNTOOOONNNNN!!!! I was the same - hesitant to get into it, but it totally won me over. Dame maggie smith is perfect!

  6. Oh boy. I have little tart pans that are waiting for something like this. But they are one-piece pans and the bottom doesn't push up. How do get the little pies out?

    1. Another Downton fan! Hmmm... maybe a long double strip of aluminum foil along the bottom and sides of the pans so you could just pull it up when the pie is done?

    I love Downton Abbey. I get so cranky though because they don't screen it here until months and months after it screens elsewhere!

    1. GRRR! I wish TV shows were available to watch online anywhere in the world. I'd pay for them and sit through some commercial breaks if I could watch Downton early!

  8. Oh my goodness that pie, that PIE! The filling looks really good and even though it's getting a bit warm to have the oven on, I am determined to make this and soon!

    Yay Downton - Violet is a funny old thing, I really enjoy the show :)

    And I am loving the duck photos, they are so cute!

  9. I have to admit, your picture of the Leek and Mushroom Pie is the tastiest one I've ever seen in my life, River. Do you have a background in food photography? :) This recipe is one of the most nutritious mushroom recipes, you know. Here’s what it has: Vitamin A 30%, Vitamin C 20%, Calcium 8%, Iron 20%.
