Who wants a scone?
Ha! Don't judge a scone by its cover! These are not boring scones - they have chocolate in the middle! Oh, NOW you want one!
These Chocolate-Stuffed Peanut Butter Scones come to us via C'est La Vegan. Kim veganized the recipe from a non-vegan cookbook, and even though they were delicious, she said they needed a little som'n som'n more. So following Kim's advice to add a little extra this or a little more of that, I doubled the Earth Balance and the chocolate. Yeah! When in doubt - always double the chocolate. That's my motto. I didn't have a bar of semisweet baking chocolate, so I used chippers instead. Thanks for sharing, Kim!

Time for another Netflix find! Are you sick of vampires yet? They have taken over the world! It took me quite a few episodes to get into The Vampire Diaries, which is not very unusual for me. This show was a little too highschooly and homecomingy at first, but it did get better. My favorite characters are Damon and Caroline, but not first-season Caroline. (If you watch, you know what I'm talking about, and if you start watching now you'll see what I mean!) About 98% of what comes out of Damon's mouth is sarcasm, and I'm a big fan of sarcasm. Nina Dobrev, who plays Elena, is lovely and she's rescued a few kittens, I think! Irrelevant, but sweet!

UPDATE: Looks like I'm on YouTube now. I made a few cooking videos. Let's see how long that lasts. They are ASMR-friendly videos with no talking or background music, only cooking sounds. ASMR videos have helped me cope with anxiety, so I thought I'd try to make my own. If you're one of those people who don't experience ASMR, then the videos might seem a bit... *odd*.
