Tofu Splurge: Spinach and Mushroom Quiche

Let's pretend I didn't just trash-talk myself publicly.

I love soy, but my body can only handle so much before it starts to bother me. Tofu is one of my favorite foods, so when I do eat it, I try to make it as tasty as possible and I mindfully enjoy every single bite. Last night's tofu splurge was this creamy and flavorful Spinach-Mushroom Quiche via 101 Cookbooks!

The recipe was supposed so be very involved and time consuming, but I failed to read that vital piece of information until I was ready to start cooking at my regular dinner-cooking time! Dummy! To save time, I toasted the oats and seeds for the crust on a skillet instead of the oven, and I used frozen spinach. Also, I made the quiche in (four) little tartlet pans instead of one big pie dish to reduce baking time. I baked them for 40 minutes, but that was too long because the crust was a bit overbaked. If you decide to make little ones, you might want to try 30 or 35 minutes instead. It took me an hour and a half from start to finish, so the shortcuts paid off! The tofu filling was delicious! How can you go wrong with tofu, mushrooms, and spinach? And how can you not love something that is made with a speedy herb and garlic infused olive oil? Go check out the recipe! Up close and personal

Moving on to the couch potato business. Most of my Netflix finds are TV shows instead of movies. I love watching something that ends with a cliffhanger, and then just click "next episode" right away. Waiting for a whole week to see what happens next? No, thanks! Commercial breaks? Ha! I laugh at commercial breaks. One of my favorite cliffhanger-filled TV shows of all time is Alias. (Hi, Sal!) Jennifer Garner is so badass! The colorful wigs, the awesome outfits, the fancy accents, the high-energy fights - it's all so super cool! Papa Bristow (Victor Garber) is probably the coolest father on TV ever! Ever, I'm telling you! It did get a bit goofy after the first few seasons, but that's OK, at least it actually had an ending. Don't you hate it when they cancel shows without an ending? Grrr!!

  1. I love the way the texture of your quiche looks. And you know, sometimes shortcuts are the difference between making and not making a dish. It pays to have a bag of already washed and chopped spinach in the freezer!

    1. Definitely! I rarely buy fresh spinach, unless it's baby spinach. Frozen spinach saves time and it doesn't stink up the house like fresh big-leaf spinach does - I really despise the smell of boiled spinach!

    1. The recipe calls for a little sprinkling of paprika on top to make the quiche look pretty and more colorful. I love that kind of detail!

    2. Thanks, Mandee! I have enough material for another week, so hopefully I'll make it. Yesterday's post was postponed until today because the video I was making took me all day! Your posts always seem so effortlessly done!

      Quiche is so good. Have you tried white bean quiche instead of tofu? Might not be quite the same, but worth a shot!

      Curly sure loves his tail. He grooms it several times a day - gotta keep those tail feathers shiny and curly!
