Vegan MoFo: Quick Easy and Delicious Coconut Macaroons

Today's Vegan MoFo prompt is "quick, easy and delicious." Are you a coconut person? I am!

I see you don't look surprised to hear that.

Coconut macaroons! Coconut macaroons! This is a recipe by the one and only, the almighty goddess of alternative baking, Ricki Heller. If you've been reading my blog for a while then you've seen me rave about Ricki's recipes before, but this one I think is my favorite of all. I must warn you, these are one of the most addictive little treats I have ever had in my entire gluttonous life. "I'll eat one," I said. Ha! I'm not even going to tell you how many I ate as soon as they came out of the oven. I was like a greedy chipmunk stuffing food into my cheeks in preparation for the winter.

These tasty little morsels are made with nuts, coconut, and flax meal, and they are sweetened with agave and either coconut nectar or maple syrup. I used almond meal for my macaroons because I was too lazy to grind my own nuts. I didn't have tahini, so I used cashew butter instead. The cookbook version calls for Stevia, but I found they were already plenty sweet and delicious without it, so I skipped it. These coconut macaroons are from Ricki's cookbook Naturally Sweet & Gluten Free, and you can also find the recipe over at Ricki's blog. (Scroll down to almost the bottom of the post.)

Vegan Coconut Macaroons

The leaning tower of coconut macaroons! These really are quick, easy, and delicious. *Some people* will be happy to know that there is no coconut oil or coconut butter in these. Should we peek inside of one?

Speaking of sweet little things, here's a picture of Dovey trying his best not to slide down the top of the bird feeder. Slippery stuff!

  2. Your recipes are always a hit, Ricki! They make themselves look glamorous and gorgeous! :)

These coconut macaroons are so yummy and so easy to make. I love them!

I was so excited to join Vegan MoFo this year, but then I procrastinated and didn't prepare anything in advance, so now I will only be able to participate sporadically. People who participate every single day are so impressive!

  3. I actively seek ways I can eat more coconut, if I ever develop and allergy to that hairy tree orb it will be a dark dark day. I'm gonna get a little patriotic here and say 'Yay Canada!' Ricki Heller the alternative baking queen -I love that! Dovey's little chest floof is too cute!

I can't believe there are no videos on the inter-web of wood ducks singing love songs ;)

  4. You are so sweet! You can imagine my thought process... 'Oooooh... coconut, I love coconut... wait, coconut... is there oil?.... hmmm... doesn't sound like there is oil.... oh look, she specifically mentions that there is no oil in it just for me!'. Hee hee. Thanks. :)

  6. "Hairy tree orb!" You crack me up! :D

Yay Canada! Yay Ricki! You noticed Dovey's chest floof! I was wondering if anybody was going to notice it. Isn't he a cutie?

I will make it my life mission to capture the magic of the wood duck's love song and share it with the interwebs!

  9. They are amazing! They are so chewy and delicious. Dovey is such a sweet birdie. He gets along with all the other birds and never bullies anyone. I love him!

  11. Did you use both the agave nectar and the maple syrup?

I love, love macaroons, and these look great!

  16. This is the most screwed up blog I have ever seen in my life. I've been searching for the macaroon recipe for 15 minutes and I'm so frustrated that I will come up with my own now. Thanks for nothing

  17. Hi Pat. There is a turquoise arrow pointing at the link to the recipe. Does it not show up on your browser? If not, the link to the recipe is in the second paragraph below the first photo of the macaroons. Here is it again: http://www.rickiheller.com/2010/11/vegan-mofo-week-two-recap-three-giveaways-multiple-cranberries-and-my-home-is-a-tv-studio/

That link leads you to the original recipe on Ricki Heller's site. If you scroll down to the bottom of that post you will find her recipe there. It would be pretty shady of me to publish the recipe here instead of linking to it because I wasn't the one who created it. I hope you have a chance to make these and that you enjoy them as much as I did - they really were delicious.
