Potato and Brussels Sprouts Omelette

Remember the Wing It Don't Fling It Challenge? There were some leftover oven-baked potato wedges and roasted Brussels sprouts in the fridge and I decided to whip up a quickie omelette/pancake to use them both up. Yes, I did burn the Brussels sprouts again.



I used my old basic Spanish Tortilla recipe to make this, but instead of cooking a potato I just threw the leftover baked potato wedges and sprouts in there for a quick and easy meal. This is a dish I never get tired of eating because it can be made different every single time! This time I threw in a few saffron threads, but unfortunately they are hiding at the bottom of the tortilla. They're in there somewhere!

  1. Oooo. I remember the Spanish tortilla. It's so good. I wish I could remember it every time I made a plain old chickpea pancake. It's so much better with potato! I never remember about the potato.

    1. Potato makes everything better! I make this quite often because it's a fairly quick and easy dish. And yummy! :)

  2. Mm. that sounds and looks really good. I love these savory chickpea pancake/omlette creations... they are so filling and emotionally satisfying! ... plus I love them even more with some veggies mixed in. Yum!

  3. oh yum this sounds great. I don't mind a bit of burnyness (spellcheck is telling me that's not a word for some unknown reason!!) on mah sprouts.
