Cheesy Cauliflower Sauce

Can you hand me the... the um... vegetable... the white broccoli? That's what I asked Mr. Wing-It a few months ago when I couldn't remember the word "cauliflower". Mr.Wing-It knew exactly what I meant though! For today's edition of my Lazy MoFo, I bring you this deliciously vibrant Cheesy Cauliflower Sauce, courtesy of Susan at FatFree Vegan Kitchen. Behold...



Bam!! Isn't it gorgeous? It is delicious and very very light. I actually used frozen cauliflower instead of fresh and it worked out just fine. It has plenty of nutritional yeast so it really is very cheesy, and the lemon juice gives it a nice tanginess that makes the sauce extra flavorful. A little bit of turmeric gives it that lovely yellow color. Mine had a little salt instead of miso to keep it soy free. I had to add a little extra water to the finished sauce because it was more scoopable than pourable, but scoopable would have been nice too. So far I've only had it on broccoli, but I can't wait to pour it on just about everything but dessert. Thank you for sharing this perfect recipe, Susan!

  2. Yum! Cauliflower is one of the most versatile vegtables! It can become everything from cheese sauce and bread crumbs to mashed potatoes! I wonder how many layers of cauliflower we could use in one dish?!

  3. Ooo yeah, cheesy cauliflower sauce is the best, I think. Last time I tried to make mac-and-cheese with it, and serve it to little Miss E, she said no thanks. I was crushed. Guess I'll just have to eat it all myself.

  4. I love using cauliflower in dips and sauces and I've actually made a similar cauliflower cheese which I ate over....steamed cauliflower. I guess you could say I like it. ;)
