Fine, I’ll bake chickpea cookies

Mr. Wing-It and I are in preparations for our travels, and very soon Wing It Vegan will yet again go into hypersleep until September or October – just in time for Vegan MoFo! I intended to make my funny little Strawberry Love Bugs before Valentine’s Day, but I don’t think I will have time for that this year. Curse you, responsibilities! I’ve also been working on a massive Cookin’ Crunk post for a while, and hopefully I will be able to publish it before we leave. Fingers crossed!

Anyway, I was determined to be good and show some self-control after a trip to the dentist a few weeks ago, but all that willpower vanished when I saw that Ricki had pinned these delicious looking chickpea-based peanut butter cookies. To hell with temperance! Give me cookies! I rolled my eyes at chickpea cookies and bean brownies for years, and finally last week I gave in and tried them. They were wonderful! Chickpea flavor? Nope. Just vanilla, chocolate, almond (I made mine with MaraNatha almond butter instead of peanut butter), and a what-is-that flavor that does not taste like chickpeas. This non-believer is now a worshiper of the chickpea cookie! Thank you for the recipe, Erin!

Chickpea-Almond Butter Cookies
My elebentieth batch in two weeks.

I am not accepting products for review these days – unless something looks irresistibly good! That is what happened when the good folks at Parmela offered to send me some aged vegan parmesan. How could I resist?


It’s very sharp and flavorful, so a little goes a long way. This product is more like dairy parmesan than any other vegan cheese I’ve ever tried. It resembles fresh dairy parmesan, unlike the white powdery parm substitutes that resemble that super fine floury dairy pasta topping thing. (I do like the white powdery vegan parmesans too though)


That is a nice plate of polenta with tomatoey lentils and Parmela on top. Why did I choose a yellow food to show a yellow parmesan product? Dummy! Take a look at the ingredients and nutritional info:

      Beans in baked goods just sounds so wrong! I’m glad I gave these cookies a chance though. Maybe black bean brownies will be next? We’ll see! :)

    I have to go to the dentist next week. I’m so not very excited about that. I floss daily and everything but still… cavities galore!

    Anyway, the cookies look amazing! Nice and gooey. Thanks a lot for leaving feedback on the recipe and linking to it. :) I really appreciate it!

    And I love the duck! Ducks are almost my favorite animal. Just after baby elephants. :D

      It’s tough to beat baby elephants! But I’m sure ducks would be very happy to come in second place anyway :)

      Actually that sounds like fun – but I would probably end up buying too much stuff at all the flea markets and then you’d see me on Hoarders some day.

    Chickpea cookies, eh? I’m going to have to try that recipe the next time I’m in the mood for some cookies! And that parm looks pretty awesome–I love how vegan cheese is getting so innovative & tasty lately!

      It’s very tasty! We have a Whole Foods trip planned for this weekend and I’m going to have to pick up a little tub or two of Parmela.

      Isn’t she a cutie? I love it when they dig in the snow with their little beaks. It’s also funny when they dig in the mud and end up with “mud facials” :D

      Aw, thank you! I will definitely try to update the blog at least a few times with travel photos. No food, but cute wildlife is definitely blog worthy! :)

      I hope you love these cookies too if you make them for the bake sale – they really are so good! It looks like chocolate chip cannelini bean cake will be my next food adventure!

    I was grossed out by the whole sweet-bean idea for a long time, too, until I made a chocolate chip cake with cannelini beans as a major ingredient. I’ve made it over and over — even for “regular” people and it gets snarfed up every time with almost none left for me. I’ve even turned the recipe into cookies. Lately, my cookies have all been of the almond flour/oat flour/chocolate chip variety but you’ve just given me a great idea. I’m supposed to make bake-sale cookies tomorrow and maybe they will be chickpea cookies!
