If you want a happy post, then a happy post you shall get! I’m working on an *extra* happy post that should be ready soon, but YouTube is fighting me and not letting me embed a couple of videos that I have already spent hours searching for! The cretins!
Anyway, I totally let MoFo kick my butt, and now I have a few pictures of some awesome foods that I didn’t get to blog about and I must share them before I procrastinate some more!
Why don’t we start with a big, over the top burger? I saw the recipe for these lentil patties on Alisa’s blog, and I immediately knew I wanted to devour one! Alisa adapted them from Vegan on the Cheap to use less vital wheat gluten because her gluten has “super-binding power.” That’s what made me want to try them, because I often find that gluten based patties are too tough and chewy for my taste. These were perfect!
Alisa’s Speedy Wheat Hamburger Buns are my to-go quick burger bun recipe. They are fluffy and springy and soft and perfect! The recipe calls for one egg or a substitute, but I have made the recipe without an egg replacer and they were just as awesome. I added a bit more water to make up for the egg, but I always wing it so I’m not sure exactly how much extra water I add. As long as I use bread flour and as long as they rise somewhere warm for about 15 minutes before they bake in a well preheated oven, they always come out soft and fluffy.
Eggplant balls, anyone? These are Jenn’s award-winning Basil Eggplant Ballz of awesomeness. You have two options, you can make them “meatballier” or “eggplantier,” I went for the eggplantier version. They have a lovely texture and they are deeelicious! Now I wish I had made the sauces that were also a part of the award-winning dish, but when the lazies attack, there’s no fighting back!
Sal’s Lentil and Sausage Soup had me at hello! This soup is a cold winter’s day’s best friend! Smokey fauxsages, hardy lentils, yummy spuddy and veggie bits, herby goodness, it all comes together to become one big comforting soup that is sure to warm up your belleh! Pair it up with a nice chunk of bread and let the wind blow! (Hmm. That was not intended as a double entendre because of the *windy* lentils!)
Next up is Kiersten’s Cheesy Broccoli and Rice Casserole of greatness! Kiersten’s casserole is going to become a regular meal here in the Wing-It household, it’s filling, it’s warming, it’s delicious, and it’s easy to make! It satisfied my cheezy craving and then some! I love the smothered broccoli bits and the crustiness that formed on top of the dish. When I was gathering all my ingredients I noticed that I was out of brown rice (oy!) but I did have some brown rice couscous, which is basically brown rice broken into small couscous sized pieces. I was determined to make it, and waiting a few more days to go grocery shopping wasn’t an option! So now I can tell you that it also works wonderfully with brown rice couscous! :)
And now let’s have some dessert! Celine’s Almond Spelt Sweet Rolls are the bomb-diggity-bomb! Do you have Celine and Joni’s book 500 Vegan Recipes? You do? Awesome – you can find the recipe there! You don’t? That’s OK, Celine is the coolest cat and she shared the recipe on her blog! The rolls are amazing! That sweet, crunchy top with zesty orange is the best! Gimme one of these beauties and a cup of hot coffee and I’m a happy camper!
