Final Halloweegan, Stuffed Jack-O'-Lanterns, and Frankie Cakes

Oy with Halloweegan already! This post marks the end of Halloweegan thanks to my cursed kitchen that keeps sabotaging my every attempt at cooking. I think one of the mashed potato ghosts managed to escape from the haunted cottage pie and it's creating havoc in the kitchen now. Somebody call the Ghostbusters!

Do you guys ever go through these phases of kitchen-rebellion?

Luckily, before the ghost escaped I managed to make stuffed Jack-O'-Lanterns for my guest post on Go Dairy Free! Alisa was so kind to ask me if I wanted to be a guest blogger, and I am beyond honored to have been one of the chosen ones. Go Dairy Free is overflowing with information about moo-juice-free living and I am glad to be able to contribute a little som'n som'n to Alisa's awesome site. Frankie Fail

OK, so it doesn't look incredibly horrible, but this is not what I wanted to do with them at all! Frankie seemed to be the most popular felt coaster, so I wanted to do some little Frankie cakes that would look similar to the coaster.

Well, that didn't work.

They were supposed to have bluish purple facial features and hair, but frozen blueberries from a berry-mix do not make bluish purple food coloring. Nope. It's pink. PINK. A pink Frankie? No! Do. Not. Want! Anyway, after I realized that the frosting wasn't going to work out, I decided to decorate the faces with melted chocolate. When in doubt, do chocolate.

Can you tell I put zero effort into them? Meh.

In case you're wondering, the cake is green because it has baby spinach in it. Don't gag. It doesn't taste like a salad, it tastes like yummy cake! The cake is the basic vanilla cupcake recipe from VCTOTW, baked in an 8 inch square pan for 28 minutes. To make it green, I blended a handful of raw baby spinach with the milk before I added the apple cider vinegar. Also, I added a couple of teaspoons of lemon zest, which played a trick on Mr. Wing-It's mind and made him think the cake was lime flavored, because it was green! Mwahahaha!

Halloweegan was a lot of work! I want to sit back and enjoy someone else's work now!

  2. My memory of my only attempt at stuffed pumpkin, though very old, is still too horrific for me to ever make another, but if I did, yours sounds hallowicious!

    Perhaps there should be two mofo sign-up lists — writers and readers/commenters. Seriously, it's hard enough to crank out one or two posts a week and keep up with other blogs; four posts plus reading and commenting will be intense.

    Spinach-lime cake is on my to-do list. It's right up there with p-nut butter and broccoli sandwiches. (But the cake sounds good!)

  8. Funny I had an issue last night trying to get a really nice purple for some cupcakes for school today. Didn't turn out and we went with orange instead. Oh well still tasted good.

    I love the look of the green cake--though I have no idea who Frankie is (I can hear the gasps right now), so to me it just looks cute. And a guest post--how great! I'm off to check it out (little *poof*)!
