Hi! I'm taking a little break and it might take me a few days to reply to comments and emails. I'll be back soon! :)

Very Berry Soft Serve and Quinoa Pae-ish

It's frozen treat day! *happy dance*

I was feeling a little fruity again today, so I made some instant raspberry "ice cream" and topped it with some mixed berries (blueberries, raspberries, blackberries, and strawberries).

I don't have a recipe for this one. It was a major wing-it job. I took some frozen banana slices (about 1 banana) and a bunch of raspberries (about twice as much as the banana), and ran them through the food processor until they became a dark pink thick (but chunky) cream. Then I poured some soy milk through the food processor's chute until the thing had the consistency of soft serve. I also added just a tiny bit of brown rice syrup for a little extra sweetness.

Moving on to the quinoa paella. It's not quite a paella because it's not made with rice, but it's a close cousin. It's a pae-ish. I got the idea for this from two different blogs: the Quinoa Vegetable Paella from Fat Free Vegan Kitchen, and the Everything But The Kitchen Sink Burritos from Small Space Sweets. I gathered all the veggies that were in the fridge and needed to be used up before they went bad, sauteed everything in a little olive oil, added one part quinoa and two parts vegetable broth, and simmered it all (covered) for about 15 minutes. We had the quinoa paella with roasted asparagus and sweet potato hash. Much like the pae-ish, calling some plain shredded and sauteed sweet potatoes a "hash" is a stretch, but if I call it "Sweet Potato "Hash-ish" like the "pae-ish"... things could get dangerously confusing!

  1. Love the quinoa "pae-ish"/"hash-ish" AND that frozen treat - yum!

  2. Thanks veggiegirl! I love my frozen treat days!

  3. I have quinoa in my cupboard and have no flipping clue what to do with it. Just like me and my block of tofu. The mind is willing but the spirit...whatever that silly saying is.

I shall have to attmept to make this dish. Wish me luck.

And come check out my frozen vegan treat, we learned it form our vegan friend Erin. Good food came from that woman.

  4. Wow! That's a great idea for homemade berry soft serve. I gotta give that a try soon!

  5. Cooking Lady, I'm going to try the stuffed peppers with quinoa and walnuts from Vegan Tickles. It looks really really good. Check it out!

Bianca, these frozen banana ice creams are awesome! I found a basic recipe for them on vegweb 5 or 6 years ago but never did give them a try until a couple of months ago. Oh, what I was missing!

  6. Oh, wow! I'm drooling over that soft serve. It sounds amazing and it looks beautiful in that picture!

I agree that it would be confusing if someone said they had hashish for dinner! Ha ha!

  7. Thanks Jenny! I had the strawberry version today and it was really really good. Why on earth did I wait so long to try these frozen fruit ice creams!

  8. Hey River...we made the brownie dessert again. Wow!!!!!

  9. You're a choco-holic too, Cooking Lady! I'm so glad you liked it!
